I am a little behind on my champagne cocktail posts… woops! I feel like this year is just flying by, it’s crazy! I hope to be all caught up by the end of July. What an “awful” first world problem to have… 😉
This cocktail is actually from May and when I first saw the recipe I was a little unsure if this cocktail would taste any good or not. The main flavours are cucumber and lemon. Now, lemon I can get behind. I love lemon. But cucumber… I mean, there is nothing wrong with cucumber, it’s just not a flavour that I naturally gravitate towards. I’ve seen cucumbers in different drinks before, but I just wasn’t sure if I would like it or not. Well there was only one way to find out…
– 1/2 cup sugar
– 1/2 cup water
– 1/2 cup lemon or meyer lemon juice
– 4 slices peeled cucumber
– sparkling wine
– cucumber spear for garnish
Simmer sugar, water and lemon juice together until the sugar dissolves, about 5 minutes. Let cool.
Using a mortar and pestle, or muddler, crush 4 slices of peeled cucumber.
In a cocktail shaker or jar filled with ice, add 4 oz. of the lemon mixture and the smashed cucumber. Shake well and strain.
Add the mixture into 2 champagne flutes, top with sparkling wine and garnish with the cucumber spear.
I actually really loved this cocktail! The cucumber gave the drink an interesting, refreshing flavour, but it wasn’t overpowering at all. The combination of cucmber and lemon just tasted so fresh and summery, I really enjoyed it! I think this cocktail would be perfect for a hot, summer evening.
