Pumpkin Spice Smoothie

Well hey there everybody, I hope you had a great weekend! I know I did. I started my weekend off with an awesome workout at Barre Body Studio. I started taking barre class about a month ago and I was hooked after the first class. Barre fitness is rooted in Ballet and focuses on building flexibility, strength and long, lean muscles. I did ballet for more than 15 years, so it’s been great to get back to the barre. You really don’t need any dance training though, I have a couple of non-dancer friends who have also fallen in love with barre class. If you are looking for a new, fun fitness class, I really recommend giving it a try!

For the last couple of weeks I have been doing an early morning class and nothing tastes better after a good workout than a delicious smoothie. Especially one that is jam-packed with flavour and all sorts of things that are good for you! Nick and Lauren recently pointed me in the direction of a Pumpkin Spice Smoothie recipe on the Lululemon Blog. It pretty much tastes like pumpkin pie in a glass, yum!

Pumpkin Spice Smoothie Ingredients

Pumpkin Spice Smoothie

– ½ cup canned pumpkin
– 1 cup skim milk
– 2 frozen bananas
– 2 dates
– 1 scoop of vanilla protein powder or 1 egg*
– ½ tsp vanilla extract
– sprinkle nutmeg, cinnamon, cloves and ginger

*Note, I’ve been having raw eggs as a source of protein in my smoothies since my dad was making me breakfast shakes when I was little. It’s a personal choice and I ensure that I only use fresh, un-cracked eggs and drink my smoothie right away. Here is some information from Health Canada about using eggs. An alternate source of protein could be tofu or protein powder.

1. Put all ingredients together in a blender and blend until smooth and creamy.

2. Pour into a glass and enjoy!

Pumpkin Spice SmoothieThis smoothie was the perfect after-workout snack; nutritious and delicious! Also, it’s a great way to enjoy pumpkin spice flavours without all of the calories and fat that you’d find in a slice of pumpkin pie. Yum!

Another great thing about this recipe is that you will undoubtedly have canned pumpkin leftover, which is an excellent excuse to try out even more pumpkin recipes…. pumpkin pancakes, pumpkin scones, skinny pumpkin chocolate chip muffins… the choices are endless!

Happy Sunday!
