This is my second last post for this year’s 12 Posts of Christmas. The last post of Christmas is going to be my mom’s famous fudge sauce recipe… but seeing as it’s January and everybody is focused on working out and eating healthy, I thought I’d delay that post for a little bit and instead focus on some great recipes that are not only healthy, but delicious!
These breakfast “cookies” are the perfect breakfast to help get you going in the mornings after weeks of indulging over the holidays. With only 3 ingredients, these cookies are incredibly easy to make and lend themselves to all sorts of variations. Instead of chocolate chips you could use raisins, nuts, cocoa nibs, or whatever you want! And seeing as these cookies don’t have eggs or flour in them, I think they could work really well for all sorts of different dietary restrictions.
Healthy Banana Chocolate Chip Oatmeal Breakfast Cookies
makes 16 cookies
– 2 medium, very ripe bananas
– 1 cup of quick oats
– 1/4 cup chocolate chips
Preheat oven to 350°F. Spray a non-stick cookie sheet with cooking spray or use a Silpat.
Combine the mashed bananas and oats in a bowl. Fold in the chocolate chips and place a tablespoon of each on the cookie sheet.
Bake 15 minutes. Enjoy.
This recipe works best if you have a banana that is quite over ripe, so don’t be afraid to mash up your ugly brown banana to make these delicious breakfast treats. The more ripe the better!
These breakfast treats are super soft and chewy, they actually almost have the texture of a muffin. And they don’t last long once baked, probably no more than a day. So, it’s best to eat the cookies served warm, fresh out of the oven. They are even better with a cold glass of milk to wash them down. Now, that’s a good way to start your day!

Tried these this morning – I made double the mixture and added craisins to half. Then I got fancy and added an almond on top. They were delicious!
