Canadian Flag Cake – Strawberry Shortcake

Not only does this cake look incredibly patriotic, but it also tastes delicious.

Canada Day is coming up in a few short weeks and this year is going to be extra special because this beautiful country is turning the big 1-5-0. That’s right, Canada is turning 150 and I can’t imagine a more perfect place to be to celebrate than in the nation’s capital, Ottawa!

No matter what your plans are for celebrating, I guarantee that a delicious Canadian Flag Strawberry Shortcake will make the day even better. Lucious, white whipped cream topped with gorgeous, red strawberries laid out in the shape of a maple leaf, what could be better?

*I used a recipe I found for a sheet pan shortcake, but you could use any type of white cake recipe for this.

  • 3 cups Bisquick mix
  • 1 cup white sugar
  • 1/4 cup butter or margarine, softened
  • 1 cup milk
  • 2 teaspoons vanilla
  • 2 eggs

Topping

  • 2 cups whipping cream
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla
  • large container of strawberries, sliced
  1. Heat oven to 350 degrees. Grease a 13 x 9 pan.
  2. Add all of the cake ingredients into a large mixing bowl. Beat with an electric mixer for about 30 seconds.
  3. Bake for 30-35 minutes or until a toothpick inserted in the centre comes out clean. Allow to cool completely.
  4. Place a metal mixing bowl and your beaters/ whisk in the freezer for about 20 minutes. This will make whipping up your cream much easier – I promise!
  5. Add the whipping cream, sugar and vanilla together in your cooled bowl. Mix on high speed using your electric mixer until medium to stiff peaks form.
  6. Spread the whipped cream all across the top of your cake.
  7. Now the “fun” part (aka the part that might make you pull your hair out depending on your artistic ability). Start laying out your sliced strawberries in the shape of a Canadian flag. I’d suggest that when it comes to the maple leaf, you started with the points and then fill in the rest.
